some have guitar tops of .
mahogany, sapele , cedar.

some have back and sides of

Well aqualib, this will probably confuse you some more

The cedar refered to for necks is probably different from the cedar refered to for tops and b/s and even more confusingly very few of them are actually true cedar in the botanical sense :D The neck wood is usually cedrella (Spanish cedar etc) and the top wood is usually something like Western Red Cedar or Alaskan yellow cedar or .... I don't know of many guitars made with cedar/cedrella b/s but there probably are some - maybe flamencos with cedrella.

All of these woods are members of the Meliacea or mahogany family and you could make a guitar if you wanted to using top. b/s and neck from all four groups - mahoganies, sapele, cedrella and "cedar" with appropriate design, selection of wood and bracing. I've made mahogany and sapele ones.

The only true cedar I have seen used in instrument making is Cedar of Lebanon which I have used for a neck on an electric guitar.

There is no reason at all that you couldn't make a guitar out of Mahogany. You'd still use something harder for the fret board and bridge though.

I've built on completely out of Cypress, except for the fret board, bridge and headplate that is.

Many ukuleles are made from one species of wood. Quite common in fact.

The top bracing is pretty much always spruce or cedar though isn't it?

It has been on mine, but you could use Douglas Fir (Oregon for the Aussies) ore even mahogany. Might be a whole lot of other options out there that we aren't aware of.
