Thought I'd post a long overdue update! replacing the tone bars actually fixed the issue quite well. It decreased the bellying enough to make the guitar structurally sound. Unfortunately I cracked the top while taking the bridge plate off.... so a re-top is needed now anyway.
Any bridge plate removal techniques would be greatly appreciated, so I don't repeat history!
