Pick Up Question

I am wondering about re-fitting the pick-up to my daughters violin, which I have been restoring for some time. Can someone tell me what the silver strip is on the pick up strip...should it be positioned facing the bridge or body? Also, you will notice it has slipped on the black strip, can it be removed and replaced and what is it's purpose?

On the Artec under saddle pickups that I use on a couple of my string testing jigs the foil is under the piezo elements. http://www.artecsound.com/acou/piezo.htm

On the Fishmann under saddle pickup Ive installed on a current build there is a foil layer on top of the pickup (ie between piezo elements and underside of saddle.
