This is probably a dumb question but I am building my latest two instruments using hot hide glue if I want to thicken it up a bit can I just add less water? Thanks in advance for any help and sorry if this is a stupid question but I don't want to weaken the glue in any way.

Yes, but you may want to consider doing a time trail on how long it will take you to get the piece clamped into position and consider heating the parts to be glued or the room, or both.
Going for a thicker glue mix can go wrong by the glue chilling and not getting most of it out of the joint in time. I buggered up my first Ebony fret board doing this , and have been caught out plenty of times on other woodworking jobs .
The main cause of a weak joint using HHG is leaving to much glue between the two pieces. I think it's pretty amazing how thin it can be and how well it holds.

You can vary the viscosity of HHG quite easily by adding water, or leaving the container open while it's heating and evaporating some of it off.
