Further,, While you are fitting the centre join check the inside face of the plate with a straight edge so you can get that surface as flat as possible, even if the wedges are cupped a bit you can still choose the best line you want the two halves to take. Then once you've made the join and glued up, it shouldn't be too difficult to plane that inside surface nice and flat so when you lay a straight edge on each , they are nice and parallel with each other.
