Re: Plates thickness.
Depends alot on the wood you're using. The tops on my classicals and steel strings arent all a uniform thickness....I usually thin the top towards the perimeter of the lower bout and waist area.
Most experienced luthiers will aim for a ball park thickness for a top but final thickness will depend on stiffness of the wood and design of bracing.

Re: Plates thickness.
On steel strings for sides made from Indian Rosewood I make mine 2.2 - 2.5 mm thick. Backs are 2.8 mm thick.
That is just a close approximation. It really depends on the size of the guitar, and what I'm wanting to do with the bracing.
For tops I couldn't give you anything that would be helpful unless you were using the same wood as I am, and bracing in the same way on the same size of guitar.
If you had a more specific question, then you may get more helpful replies.

Re: Plates thickness.
Are you looking for a starting thickness or the plate thickness when its ready to be glued on to the rim?

i want final thickness of plates ready for gluing to ribs
Re: Plates thickness.
Like Allen said, the question is too general. There is no magic number that fits all woods and all designs.

Re: Plates thickness.
If it is any help Rahoul, Cumpiano suggest that beginners building from his book should aim for 1/8 inch in spruce.

Re: Plates thickness.
If I recall correctly I think Cumpiano recommends 3/4" high bracing at the x brace with a .125 spruce top for a SS.For me this is over built. For good sitka a starting point would be about .115 top with 5/8" high x bracing. This assumes you are using wood with good stiffness to weight ratio. BUT this is the one part of built that is hard to put absolute figures to, not like 25.4 " for scale lenght or 4" dia. for sound hole. Bracing and voicing must be learned by doing, and not just one guitar. For a first guitar it is better to over build then under build. With an over built some corrections can be made after construction but not easily.
