Just trying this out on a few test pieces to get the hang of it before using it on a guitar.

What do you mean by full strength. How long it takes to grab and stay put, or to fully cure? To grab and stay put depends on the gram strength of the glue, how much you've thinned it, and what the temperature and humidity are. This could happen in as little at 10 - 15 seconds.
I've worked on some joints that really aren't under a lot of stress in about 2 hours. but for anything that is critical, I just leave it over night. I always leave a bridge to dry 24 hours before stringing it up.

It's not going it get any stronger after that Jeff. Have fun with it.
Using hide glue seemed so intimidating at first for me, but now it's my glue of choice, and only use something else when I can't find a way to us it and am forced to use an alternative.
I use it for bindings and purflings now and I find it works so much better than Titebond and the like.
